TAKE FIVE/ Easy Reader Recipes

"This (Cola Chicken) has to be the easiest recipe I've ever madeand it's good, too," writes Gayle Lynch. "I discovered it on theInternet when looking for recipes that I can use on the WeightWatchers program (for those who are, it is only four points perserving)."

COLA CHICKEN

Yield: 4 servings

4 boneless, skinless chicken breasts

1 cup ketchup

1 (12-ounce) can diet cola

Put chicken in single layer in nonstick skillet. Pour ketchup anddiet cola over top. Bring to boil on high heat. Cover and reduce heatto medium-low. Simmer 45 minutes.

Uncover, turn up heat to high and cook until sauce thickens andadheres to chicken. If desired, add a pinch of dried red chili flakesfor extra kick.
